Few Egg Dishes

I love eggs!! Infact eggs are the essential part of our balanced diet.

Eggs are the most complete and naturally produced foods which are loaded with lots of nutrients such as proteins and vitamins. Eggs are the excellent source of minerals like calcium, zinc and iron. They contain low calories and fat.

Eggs are the most versatile ingredient which can be used to prepare numerous delicious dishes. It can be sweetened to make desserts or you can scramble or fry. In this article, i am going to share two very easy egg recipes with you that can be served as either breakfast or as an evening snack.

Potato and Egg Sandwich:

One of my favorite recipe…it’s an easy recipe which won’t take more than 4-5 minutes to make a filling sandwich.

The ingredients required are: egg, boiled potatoes, butter, olive oil, bread, salt and pepper.

You can begin with heating an olive oil in a pan and break the egg and cook for 1 minute. Season it with salt and pepper and flip over the other side slowly. Cook for 1 minute. Take away from the heat and keep separately. Take two slices of bread, spread low fat butter on one side of each slice. Between the slices of bread, put half of the cooked egg, then thin boiled potato slices. You can add little salt, pepper and few grated cheese. Put the other half of the cooked egg on top. Place in a sandwich toaster with buttered side facing up. Allow it to cook for a minute on each side. Your toasted sandwich is ready to eat.

Egg Salad:

To make egg salad, you will need:

6 eggs, 2 boiled potatoes, 1 capsicum, 1 onion, 1 tomato, 2tsp lemon juice, chopped coriander leaves, salt and pepper to taste.

To make the egg salad, first you need to cut the eggs into halves. Take out the yolk and mash with boiled potatoes. Add salt, pepper, lemon juice and chopped fresh coriander leaves. Stuff the egg whites with this prepared mixture. Serve the egg salad garnished with onion rings, chopped capsicum and tomatoes.

Since egg is a very versatile food item, you can experiment and come up with different kinds of dishes from it.
