Sea Salt Caramels

Never you mind, here is a simple and economical recipe for sea salt caramels for those of you who are interested in this candy, or simply looking for something different.
You will, of course, need chocolate for the recipe. You can use any kind of chocolate but dark chocolates are specially recommended for sea salt caramels and we will be using it. So get 1 lb of dark of bittersweet chopped chocolate, 1 1/3 cup of heavy cream, 1/3 cup of honey, 6 tbsp butter, 2 cups of granulated sugar and 1/2 cup of light corn syrup. You will also need 3 tsp sea salt. There are different kinds of sea salts such as Sel Gris, Fleur de sel and Smoked Salt, all of these should be available in your local grocery store. We will be using the Fleur de sel for this particular recipe.
Start by lining an 8-inch baking pan with foal and greasing it with butter or cooking spray. Start boiling the cream in a saucepan with medium heat. Add corn syrup, honey and sugar and keep stirring until it begins to boil. Use a candy thermometer to measure the temperature. Stir occasionally until the temperature reaches 257 degrees. After that, remove the pan and stir in vanilla, butter and two table spoon of the sea salt. Pour it on the baking pan and cool it down in the room temperature until the caramel is firm enough to cut. Use a chef’s knife to cut small stripes or squares. Melt the chocolate with and dip the caramels into it. Place them on a foil or wax paper to set. Finally sprinkle the remaining sea salts over the candies when the chocolate is still wet and wait for it to completely set.
