Sizzling Silky Tokwa – Filipino Recipe

Rainy season is already here in the Philippines. Heavy rains, storms, flood everywhere – this is the normal scene of Philippines during the rainy season. But we don’t have to be all dull and unhappy. Why? Because when it’s rainy season, we we have all the reason to crave for our good hot and spicy foods to beat the cold rainy winds. And one of Filipinos’ favorite foods during this season is lugaw. But this is not about lugaw, what I will share to you is a great partner of lugaw, and that’s Tokwa. Simple it may seem, but we will add something kickin’ in this recipe that we will call as Sizzling Silky Tokwa, a kicking sweet and spicy dish you will surely love.

When I was in Pangasinan, I got a recipe magazine, and found out about this recipe, I tried to do it and it’s good, so I want to share this recipe to you as well. Tokwa or tofu in English has its roots in Japan, wherein Japanese monks, due to their vegetarian nature, tried to create a meat substitute using vegetables (of course! What else, right?). So they tried using soy beans to create a meat substitute, and they eventually succeeded in doing it, and we call it now as tokwa or tofu. Japanese origin it may seem, but we Filipinos find our own unique way of enjoying this healthy food with our own and unique Filipino recipes. So much for the tokwa, let’s move on with the cooking.

What are the ingredients for this Sizzling Silky Tokwa? Here they are:
•    Cooking oil for frying
•    5 pieces cubed tokwa
•    2 tbsp crushed garlic
•    1 medium onion sliced
•    ½ cup sweet-chili sauce
•    ¼ cup water
•    Salt and pepper to taste
Now, that you have all the ingredients, let’s start cooking. First is to heat the pan and pour in the cooking oil. Fry tokwa until it’s crispy and golden brown (don’t burn the tokwa, ok?). After frying, set it aside on a plate lined with paper towel to drain excess oil. Next, in a separate pan, heat 2 tbsp cooking oil. Sauté garlic and onion, the garlic should be golden brown before adding the onions, and the onions should turn translucent, do this until fragrant. Then, pour in sweet-chili sauce and simmer. Now, add water and bring to a boil. Season it with salt and pepper and other flavouring you wish to add. Lastly, cook it until thick and syrupy in consistency. Pour it on top of the fried tokwa that was prepared a while ago.  And that’s how you do your own Sizzling Silky Tokwa.

Aside from tokwa being a meat substitute, it is also rich with calcium that’s good for the bones, and protein that’s used for building and repairing tissues. This dish can also be paired up with fried fish or rice.

You see, preparing delicious and healthy dishes doesn’t always have to be complicated or expensive. You just got to have the imagination to make normal dishes stand out and become extraordinary dishes. With an estimated budget of 80 Php, you can have this delicious Philippine food.
