How drink tieguanyin tea rightly

Oolong tea has been more and more popular these days, ginseng oolong and Dongding oolong tea have been sold well in tea market. Actually, it is not easy to drink oolong tea rightly for it requires a lot.

Tieguanyin tea as oolong tea, is half-fermented tea between green (azymous tea) and black tea (fully fermented). Therefore, tie guan yin tea has both fresh scent of green tea and sweet taste of black tea while skillfully inhibits the astringency of black tea and bitterness of green tea.

The manufacturing procedures of tieguanyin tea are mainly isolating, air-drying, spinning, kneading, parching and eliminating peduncles.

To brew a pot of nice tieguanyin tea, it requires the following conditions:

1. Nice tea, water and tea set
As the saying goes: water is mother of tea while tea set is father, nice tea leaves require necessarily nice water and tea set, so as to show tieguanyin tea’s charm. Better use purified water or mineral spring water and tea set made from pottery of Yixing or porcelain of Jingdezhen.

2. Pot shape and amount of tea leaves
Choose the pot shape according to number of people then decide the tea amount by volume of the pot. For bulk tieguanyin tea, put tea leaves in pot to 1/3 or 1/4 of the pot volume; for loose tieguanyin tea, cover half of the pot by leaves.

3. Temperature requirement
Tieguanyin tea contains some special fragrant substance that only release in high temperature condition, so it requires boiling water.

4. Brewing time
For south Fujian and Waiwan tie guan yin tea, the first brewing time is normally 45 seconds and 60 seconds for the next time. Ten more seconds for each the following brewing time. For north Fujian and Chaozhou tieguanyin tea, the time is shorter as only 15 seconds for the first brewing.

5. Brewing times
Normally three times for green tea but there’s lingering fragrance in tieguanyin tea even it’s been brewed for seven times, so you may brew the tea for more than seven times with right methods.

Tiegunayin tea on the market now can be divided according to its original places in south Fujian, north Fujian, Guangdong and Waiwan tieguanyin tea.

Tieguanyin tea smells rich fragrant and tastes mellow and fresh while tea leaves are green with red edges. According to the color of tea water, tieguanyin tea of north Fujian and south Fujian is different: north tieguanyin tea is dark while south tieguanyin tea is clear and bright.
