Soup is not only low in fat, but most specifically, low in saturated fat. Saturated fats are bad for our hearts, making this an ideal option for anyone with high cholesterol.
It has been said that incorporating soy-based soups such as Miso into your diet can help lower breast cancer. A Japanese study showed that the breast cancer rates in the East are around ten times lower than those in the West where soy is less consumed.
Soup also offers a fantastic dietary option for those looking to lose weight quickly and preferably for a short period of time – not only is soup healthy and low in fat, but offers such a wide range of tastes that you will not become bored.
A Simple Soup Recipe: Red Lentil, Chilli and Chick Pea Soup
Low in fat, filling and delicious – the Red Lentil, Chilli and Chick Pea Soup serves up to four persons and takes just 35 minutes from prep to table!
To start, heat a large saucepan and dry-fry 2 teaspoons of cumin seeds and a large pinch of chilli flakes for one minute – or at least until they start to jump around the pan.
Add a tablespoon of olive oil and a chopped red onion –cook for five minutes before stirring in 140g of red split lentils, 850ml of vegetable stock and a 400g can of tomatoes, bringing it all to the boil.
Simmer for 15 minutes until the lentils have softened.
Give the soup a whizz with a stick blender or in a food processor until it is a rough purée. Resubmit to the pan and add a 200g carton of chickpeas (or half a can of rinsed and drained ones).
Heat your soup gently, season to taste and stir in some chopped coriander. To finish, top with a dollop of Greek yogurt and a sprinkling of coriander leaves.
