With a million and one sandwich recipes to chose from – it’s hard to decide which one is right for you, or the hungry mouths you have to feed!
When it comes to the colder months, let alone the festive period – a ham sandwich just doesn’t cut it.
Let’s consider the classic Christmas and Thanksgiving dinner of turkey with cranberry sauce – perfect festive partners. Here we combine these key ingredients in a suitably hot melt.
The Festive Melt
- 3 tbsp. vegetable oil
- 1/2 tsp. salt
- Freshly ground black pepper
- 1 large onion, thinly sliced
- 8 slices multi-grain bread
- 4 (85g) turkey patties
- 8 slices cheese
- 30 to 45g softened unsalted butter
- Cranberry sauce to serve
To start, grab yourself a large frying pan and heat a tablespoon of oil over a medium heat.
Adding the thinly sliced onion, season with some salt and pepper to taste and cook until golden. This should take approximately seven minutes.
Once done, set aside in a bowl and give your pan a wipe down with some tissue. (Careful not to burn your fingers!)
Adding another tablespoon of oil, continue to heat on a medium heat.
At this stage your want to season your turkey patties, adding salt and pepper to taste. Cook in the oil until well brown, approximately three minutes on either side.
Once again, remove from the pan and set aside, wiping the pan ready for the next stage.
Divide the onions that you cooked earlier between four slices of bread. Top with a slice of cheese, a turkey patty, another slice of cheese and finally, a slice of bread.
On the top and bottom of the sandwiches, spread butter.
Return to your pan, which should be once again set over a medium heat. Set the sandwiches down into the pan – in separate batches if necessary – turning once until lightly browned on each side, with the cheese melting. This should take approximately four minutes in total.
Remove from the pan, halve and serve with cranberry sauce on the side.
Delicious.
