Civet known as Luwak in Philippine is a cat like animal that climbs the coffee tree to eat the coffee cherries. It eats just the fleshy part of the coffee cherries and passes the beans inside. The enzymes in its stomach when work on the beans add the stimulating aroma and flavour to them. These coffee beans are later collected from the civet dung by the local tribes in Philippines- Kankanaey and Ibaloi tribes. Then the civet coffee beans are thoroughly washed and sundried followed by the common processes of roasting and brewing.

The process of gathering, roasting and brewing of civet coffee involves a lot of labour and these coffee beans are not available in abundance, therefore the cost of civet coffee usually range between USD100 to USD600.
