Create Healthy Bread At Home: Multigrain Recipe

This multigrain bread recipe is made with seven-grain cereal, wheat bran, steel-cut oats, and oat bran, barley flour, spelt flour, whole-wheat flour and all-purpose flour.

Preparation
Before you begin, you need to collect you ingredients. You will need the following to make two loaves:
1 cup water |
1/2 cup butter or margarine |
1 cup buttermilk |
1/2 cup steel-cut oats |
1 cup seven-grain cereal |
1/3 cup wheat bran |
1/3 cup oat bran |
3 to 3-1/2 cups all-purpose flour |
1/4 cup barley flour |
1/4 cup spelt flour |
1 cup whole wheat flour |
1/2 cup brown sugar |
2 envelopes rapid rise Yeast |
2 tsp. gluten |
2 tsp. Sesame or Black Seeds |
2 tsp. salt |
1 egg |
Method
Begin by heating the water and butter until boiling then stir in buttermilk. Now add the oats, seven-grain cereal, wheat bran and oat bran. Cool the mix until warm (approximately 48°C)
Combine just 1-cup of the all-purpose flour, barley, spelt and whole wheat flours, sugar, undissolved yeast, gluten, sesame seeds and salt in a bowl.
Stir in the warm cereal mixture and beat for at least 2 minutes, scraping the bowl occasionally. Add the egg and another cup of all-purpose flour and beat for an additional 2 minutes.
Now, you want to make soft dough. To do this, add enough additional flour, 1/2 cup at a time. Knead until smooth and elastic in consistency – this should take about 8 to 10 minutes by hand, or 4 to 6 minutes if using an electric mixer with dough hook.
Cover the dough and leave to rest for 10 minutes.
Next, divide the dough in half; roll each into 12 x 6-inch rectangles. Roll up tightly beginning from short ends. Pinch seams and ends to seal.
Place each loaf seam side down in greased 8 x 4-inch loaf pans. Brush the tops with melted butter, covering again and leave to rise in a warm, draft-free space until it doubles in size. This should take around an hour.
It is now time to bake; with the oven at 190ºC, leave for 40 minutes or until done. Remove from the pan, brushing again with melted butter, and leave to cool on a wire rack before slicing.
