Bitter: contains air and ether, and its food include lettuce, endive, cucumber and spinach. Decreases and increases pitta and vata layer, and is of type cold and light.
Astringent: contains air and land, and have food as lentils, cabbage, potatoes, butter, apple and pear. Reduces pitta and vata layer but increases, and is of type cold, dry and heavy.
Must be combined so as to balance our doshas according to our type, so that the proportions vary according to each person, where they live. Thus, always opt for local foods, fresh and seasonal, preferably integrated and organic farming. Canned, frozen and prepared foods have no place in Ayurveda.
