Easy Soup Recipes
Many people eat soup when it is cold outside. They enjoy a hot bowl of soup to help them warm up, but soup can be enjoyed at all times of the year. Many of the people who eat soup make it by opening up a can and heating it up on the stove. The problem with processed soups is that they are not as healthy as a homemade soup. They are often high in sodium and contain preservatives and other ingredients that people might not want to put into their body. If you have a few easy soup recipes, then you can make fresh soup whenever you want.
You might think that making soup from scratch takes time. That is not true. If you have a few basic ingredients on hand a healthy and tasty soup can be made in a few minutes. One of the key things to keep on hand is some type of stock. Chicken stock and vegetable stock can be made ahead of time and stored in the freezer for when you need it. If you have this on hand, a soup is not far behind.
Egg Drop soup is a staple of Chinese restaurants and can be made in a less than 15 minutes. The ingredients that are needed include 4 cups of chicken stock, 2 eggs, 1 tablespoon of dried onions, ½ tablespoon of parsley, and 1 tablespoon of corn starch. Pour the chicken stock into a saucepan and add the onions and parsley. Bring to a boil. In a bowl, whisk the eggs. When the stock is boiling slowly pour the beaten eggs into the pan. As the eggs are being added, stir the soup slowly.
Bring it back to a boil. Remove one cup of the liquid and add the corn starch to it. Mix thoroughly and add it back to the soup. Let soup simmer for a few minutes and then serve. Soy sauce can be added to taste and if a person wants some crunch they can add a little shredded cabbage to it. In the amount of time it would take to find a can of soup, open it and heat it up, you will have fresh homemade soup that tastes great.
